Celebrating Baba's birthday with my first upside down cake and Dinner at home our styleππ.
Now a days due to global pandemic we are all forced to stuck in our home. Our daily lives have been affected immensely. We wanted to celebrate baba's birthday because we all family member were at home in his birthday after a very long time. But also didn't wanted to spend lot and do unnecessary expenses while many people are suffering and struggling for their daily lives. In a conflict between yes or no we finally agreed on celebrating but but what we have in our kitchen, no extra expenses. Yes, that's right. Total organic and home-made birthday.
So it was almost 3 when I went to kitchen without any idea of what the hell are we going to make. Then I saw some beans and soaked chickpeas and pulses thinking of later use. Then I saw few pears, Aama brought just yesterday from garden and the idea of cake hit me. My early attempt on cake was of fruits. But pear was my first time. I had no idea how it would turn out. Then searched for videos on YouTube. There were some pear cake but all were with eggs and the ingredients they had wasn't available. So I decided to do it in my style.

Ingredients
Pear 3 (2 wedges and one puree)
All Purpose flour 2 cups
Baking powder 1 tsp
Baking soda 1 tsp
Salt 1/2 tsp
Cinnamon powder 1 tsp
Powder sugar 1/2 cup (1-2 tbsp for batter remaining for caramel)
Crushed Almond 1 tbsp
Ghee/Melted butter 1/2 cup
Milk 1/4 cup
I grab three of pears from basket and peeled them and made wedges of two and diced and grind one into puree. Then heat the pan and let sugar powder dissolve. When they start to caramelized I added a spoonful of ghee/melted butter and a teaspoonful of cinnamon powder and stir for few minutes till they change color and completely dissolve. Turn off the heat and pour some caramel in the pan (which I later realized , shouldn't have done).Then arrange those wedges at the bottom of the cake tin. Again pour remaining of the caramel after the layers of pears. Keep those aside. Then made the batter ready. I sieve all purpose flour, baking powder, baking soda, salt all together in a bowl. In another bowl mixed powder sugar and ghee for few minutes so they can get little fluffy, and added pear puree, milk to it. mixed all the ingredients and lightly blended them together. Pour the mixture in the cake tin and let it bake for 30-35 minutes in preheated oven in 180 degree celcius.

While cake was being baked I gather other items and started preparing for dinner tonight. Because it was last minute plan so I had to adjust a lot. So I decided to make fried daal, cucumber yogurt salad (raitaa), chickpea gravy, cumin rice, and fritters.It was almost 6 when everything got ready to be served.
Except from the fact that I missed paneerπ and after dinner I realized I forgot to fry papad, everything was nice. It was a wonderful birthday, obviously because we all were at home after long period celebrating and enjoying in his birthday.
And this was total organic bithday celebration.π
